Ingredients

  • 1 pound raw shrimp
  • 1/4 teaspoon salt
  • 1/2 cup white wine
  • 2 tablespoons Cajun seasoning
  • 3 cloves chopped garlic
  • 3 tablespoons olive oil
  • 1 cup heavy cream
  • 3 ounces shredded Parmesan
  • 1 teaspoon chopped green onion
  • 8 ounces rotini (uncooked)

Instructions

  1. Bring 2 quarts of water to a boil in a medium size pot.
  2. Once the water is boiling, add in the pasta and cook until the noodles are done.
  3. Remove the noodles from the stove and pour them into a strainer and then set them aside.
  4. Put a large saute pan on the stove top on medium high heat.
  5. Add in the oil, shallots and garlic.
  6. Let the shallots and garlic saute for one minute.
  7. Toss the shrimp in the Cajun seasoning and salt in a medium size bowl.
  8. Add the shrimp into the saute pan and let cook for 1 1/2 minutes per side.
  9. Add in the wine and bring to a simmer.
  10. Reduce the heat down to medium low.
  11. Add in the cream and the Parmesan cheese and stir it well.
  12. Bring the sauce to a simmer and add in the cooked pasta.
  13. Stir together and top with green onion right before serving.
