Tomato and Burrata Pasta

Our Tomato Burrata Pasta is a quick and easy recipe that has amazing flavor but cooks in about 30 minutes! It’s made with sweet, blistered cherry tomatoes, fresh basil, and garlic, tossed with pasta and topped with creamy burrata. This recipe is perfect for weeknights but nice enough to serve to guests.

Tomato Burrata Pasta

We specialize in easy pasta recipes, and this is one of my favorites. I almost always have a container of cherry or grape tomatoes on the counter for salads and stuff, but sometimes (okay, a lot of the time), I don’t quite get to them before they start losing their luster. This recipe is an amazing way to use those tomatoes before they go bad.

Be patient when you’re cooking the sauce. Letting the tomatoes sit in the hot skillet untouched at first gives them that deep, caramelized flavor. As they cook down, they create their own sauce, bolstered with garlic, wine, and pasta water. Burrata finishes the dish with a creamy texture that melts slightly into the warm pasta.

Use any short or long pasta here. Rigatoni and spaghetti both work well. If you can find really ripe cherry tomatoes, this is a perfect recipe to let them shine. The burrata should be fresh and served at room temperature so it softens into the pasta without fully melting.

Why You’ll Love This Dish

  • Quick and easy – Comes together in about 30 minutes, great for weeknights.
  • Fresh ingredients – Bright cherry tomatoes and basil give a fresh-from-the-garden feel.
  • Creamy and comforting – Burrata adds luxurious texture with no extra effort.
  • Balanced flavor – The acidity of tomatoes and wine cuts through the richness.
  • Minimal cleanup – Only two main pans: one for boiling pasta, one for the sauce.

Ingredients

  • Pasta – A sturdy base that absorbs sauce well; use your favorite shape.
  • Extra virgin olive oil – Adds richness and helps brown the tomatoes.
  • Cherry tomatoes – Sweet, juicy, and perfect for blistering in a skillet.
  • Garlic – Infuses the sauce with aromatic depth.
  • White Wine – Adds acidity and a subtle complexity to the tomato sauce. I use Sauvignon Blanc.
  • Fresh Basil – Dried basil really isn’t a great sub in here, but it’ll do in a pinch!
  • Salt – I like using Himalayan Pink salt.
  • Pepper – Use fresh cracked pepper for the best results!
  • Pasta Water – Helps emulsify and thicken the sauce for better cling.
  • Fresh Burrata – Creamy centerpiece that melts slightly into the pasta.

  3. Flip the tomatoes and cook until blistered and juicy. Add the garlic and cook briefly until fragrant.
  4. Pour in white wine and pasta water, then cover and simmer for 5–10 minutes.

FAQ

How should I store leftovers?

Store in an airtight container in the fridge for up to 3 days. The burrata will mix more into the sauce when reheated, which still tastes great.

How do I reheat this dish?

Reheat gently on the stovetop over low heat with a splash of water or wine. You can microwave it too, but stir midway for even heating.

Can I make this in advance?

The sauce can be made a day ahead and reheated. Cook the pasta fresh and add burrata right before serving for best texture.

Can I substitute the burrata?

You can use fresh mozzarella or ricotta if burrata isn’t available. It won’t have the same creaminess, but it will still work well.

Serve This With…

  • Garlic Bread – Perfect for soaking up extra sauce.
  • Arugula Salad – Peppery greens balance the richness of the pasta.
  • Roasted Vegetables – Add a side of zucchini or eggplant for a more complete meal.
  • Chilled rosé or Pinot Grigio – Light wines pair well with the acidity and creaminess of the dish.
