Ingredients

Sauce

  • 1 pound lean ground beef
  • 1 pound ground pork
  • 1 medium yellow onion, finely diced
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon dry basil
  • 2 teaspoons salt (to taste, how much depends on the brand of tomatoes and sauce you use)
  • 1 teaspoon pepper
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup olive oil
  • 4 cloves garlic, crushed
  • 2 28-ounce cans San Marzano tomatoes
  • 2 15-ounce cans tomato sauce
  • 1/2 cup Pinot Noir (optional)
  • 1/2 cup grated parmesan
  • 3 cups beef stock
  • 1 pound noodles

Cheese Topping

  • 1/2 cup cottage cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Place the ground beef, ground pork, and onion into a large stock pot. Add the Italian seasoning, basil, salt, pepper, and red pepper flakes.
  2. Break up the meat and let it brown.
  3. Remove any excess grease from the pan.
  4. Add the olive oil and the garlic and sauté for 30-60 seconds, until the garlic is fragrant.
  5. Add the tomatoes, tomato sauce, and wine to the pan. Break apart with a meat masher (or similar).
  6. Let the mixture simmer over medium to medium-low heat for 1 hour.
  7. Add the beef stock to the pot and stir to combine. Let it continue to simmer. Once it does, you can add the noodles and let them cook in the pot.
